Persistent organic pollutants (POPs) are a family of toxic chemicals that are lipophilic (i.e., fat soluble), resistant to environmental degradation, and can increase in concentration up the food chain (biomagnify). Because POPs are lipophilic, they are largely stored in fatty tissues in the body.
